The Scotch Malt Whiskey Society -  Welcome Billie H!

Billie H. is proud to announce that we are Perth's newest member of the scotch malt whiskey society, and one of only two venues in our fine city to host their wonderful whiskeys. The nose wafted peat smoke and smouldering beach bonfires; also malting floors, coffee grinds and hints of powdered spice – cherry and banana sweetness lifted it up. The smoke was definitely sweeter on the palate; we also got gulab jamuns and white chocolate drops; the finish provided intriguing woodiness (cigar boxes, burnt matches and old furniture in a gentleman’s club were cited). With water, the nose tossed autumn leaves and camphor wood-shavings on the bonfire and found sweet nuttiness and slightly overdone Welsh rarebit. The reduced palate was less smoky and still slightly maritime with additional notes of leather, liquorice and Ovaltine.

Fresh flowers brought elegant aromas of honeysuckle and orange blossom with the sweetness of pink wafer and chilli chocolate. Then fruity notes appeared, combining jelly sweets with overripe bananas and slices of lime in a mojito cocktail garnished with eucalyptus leaves. Peppery notes of fresh ginger swirled on the palate before mellowing to ginger marmalade with Earl Grey tea and a dark espresso served with liquorice. Floral and fruity notes remained dominant with water as geraniums and red roses merged with blackcurrant jelly and pineapple sweets. An abundance of vanilla now eluded to sticky cake mix rich in sultanas, hazelnuts, cinnamon and nutmeg. White chocolate, praline and buttery icing were ready to top the cake as crystalised ginger and cloves transpired on the finish
